4 medium cooking apples, peeled, cored, and thinly sliced (4 cups)

2 tablespoons margarine or cooking oil

4 eggs, beaten

2 cups apple juice

3/4 cup sugar

2 tablespoons honey

2 teaspoons ground cinnamon

1 teaspoon vanilla

1/2 cup dried tart cherries or raisins
