Saucy Chicken Rigatoni

 

Every mom needs an easy one-pan recipe such as this one. The pasta cooks right in the sauce making cleanup a breeze.

 

Servings: Makes 4 main-dish servings.

Ingredients

1 medium onion, chopped (1/2 cup)

1 clove garlic, minced

1 tablespoon cooking oil

1 14-1/2-ounce can tomatoes, cut up

1 7-1/2-ounce can tomatoes, cut up

2 cups packaged dried rigatoni or elbow macaroni

1-1/2 cups water

1 2-1/2-ounce jar sliced mushrooms, drained

1 teaspoon dried Italian seasoning, crushed

1/8 teaspoon ground red pepper (optional)

1-1/2 cups chopped cooked chicken or turkey (about 8 ounces)

Fresh basil leaves (optional)

 

Directions

1. In a large saucepan cook onion and garlic in hot oil until tender but not brown. Stir in undrained tomatoes, pasta, water, mushrooms, Italian seasoning, and, if desired, ground red pepper. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or until pasta is tender but slightly firm, stirring occasionally.

2. Stir in chicken or turkey; heat through. If desired, garnish with fresh basil leaves. Makes 4 main-dish servings.
