A splash of wine plus a hint of nutmeg add extraordinary flavor to this creamy yet low-fat pasta side dish.

Ingredients

3 ounces dried linguine or fettuccine

1-1/2 cups broccoli flowerets

Nonstick spray coating

1 medium onion, sliced and separated into rings

3/4 cup fat-free milk

2 teaspoons cornstarch

1 teaspoon instant chicken bouillon granules

Dash pepper

Dash ground nutmeg

2 tablespoons dry white wine

1/2 cup shredded part-skim mozzarella cheese (2 ounces)

 

Directions

1. Cook linguine or fettuccine according to package directions, adding the broccoli for the last 5 minutes of cooking. Drain well.

2. Meanwhile, lightly coat a large skillet with nonstick spray coating. Add onion to the skillet. Cook, covered, over medium-low heat about 10 minutes or until tender, stirring occasionally.

3. In a small bowl stir together milk, cornstarch, bouillon granules, pepper, and nutmeg. Add to onion in skillet. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Stir in wine and cheese until cheese is melted. Pour cheese mixture over pasta and broccoli; toss to coat. Makes 5 side-dish servings.
