Lemon-Basil Pasta With Vegetables

 

Grocery stores sell many combinations of frozen vegetables. Choose the one that strikes your fancy for this easy side dish.

 

Servings: Makes 4 side-dish servings.

Ingredients

1 cup packaged dried orecchietti, medium shell macaroni, corkscrew macaroni, or bow ties

1-1/2 cups loose-pack frozen mixed broccoli, French-style green beans, onions, and red sweet pepper or other vegetable combination

3 tablespoons margarine or butter

1 tablespoon snipped parsley

1 clove garlic, minced

1 teaspoon finely shredded lemon peel

1/2 teaspoon dried basil, crushed

1/8 teaspoon salt

Dash ground red pepper

 

Directions

1. Cook pasta according to package directions, adding the frozen vegetables the last 5 minutes of cooking time. Drain.

2. Meanwhile, in a small saucepan melt the margarine or butter. Stir in parsley, garlic, lemon peel, basil, salt, and ground red pepper. Pour over pasta mixture. Toss to coat. Makes 4 side-dish servings.
