Greek-Style Pasta Salad

 

In this refreshing main-dish salad, tuna and feta cheese are arranged on bow tie pasta that's been tossed with a tangy mint and oregano vinaigrette.

 

Servings: Makes 4 main-dish servings.

Ingredients

4 ounces packaged dried bow ties or elbow macaroni

1 medium cucumber, quartered lengthwise, seeded, and cut into 1/2-inch thick slices

1/4 cup chopped red onion

1/4 cup sliced pitted ripe olives

1/4 cup olive oil or cooking oil

1/4 cup lemon juice

1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed

1 tablespoon snipped fresh mint or 1/2 teaspoon dried mint, crushed

1/4 teaspoon pepper

Lettuce leaves (optional)

1 6-1/2-ounce can chunk white tuna (water pack), chilled

1 cup crumbled feta cheese (4 ounces)

6 cherry tomatoes, halved

 

Directions

1. Cook pasta according to package directions. Drain pasta; rinse with cold water. Drain again.

2. In a large mixing bowl combine cooked pasta, cucumber, red onion, and olives. Toss lightly to mix.

3. For dressing, in a screw-top jar combine oil, lemon juice, oregano, mint, and pepper. Cover and shake well. Pour dressing over pasta mixture. Toss to coat. Cover and chill for 4 to 24 hours.

4. If desired, line individual salad plates with lettuce. Spoon pasta mixture onto the lettuce-lined plates. Drain tuna and break into chunks. Arrange tuna and feta cheese on top of the pasta mixture. Garnish with cherry tomatoes. Makes 4 main-dish servings.
